Cooking Through the CSA - White Bean Burgers

I had made a batch of white bean and garlic scape dip on Saturday, but it was much more than I could possibly eat before it went bad (and my family is petrified of new things, and pretty much petrified of vegetables in general).

I had seen on a blogger friend's site that she has been making white bean burgers, and I figured I could attempt to use some of this dip and convert it into homemade veggie burgers. Now, I haven't eaten these yet (I wrapped them in wax paper, put them in freezer bags and froze them), but here is the "recipe" while it's still fresh in my head. I hope it's good.

Wingin' it Bean Burgers

1/2 recipe of white bean and garlic scape dip
about 1/2 cup seasoned bread crumbs
1 egg
about 1/4 cup diced red bell peppers
1 sprig fresh parsley, chopped
about 1/4 cup bean sprouts (I had a package of "sprout salad" that I got in the refrigerated herb section at the grocery store...can't remember if it was market basket or hannaford)
about 1/8 cup grated parmesan cheese
seasoned salt, to taste
1 scallion (sliced thin)

In a medium bowl, add all ingredients and mix until consistency is appropriate to form into patties.

At this point I wrapped and froze them.

Heat about 1 tbs olive oil in a coated frying pan/skillet or cast iron skillet. Cook until browned on both sides, pressing lightly.

I made 2 good sized patties using this recipe (almost 1 inch thick). You probably could get 3-4 smaller ones out of this though.

I would have liked to add some more veggies to this, like carrots or corn but I had none.

I think this may be tonight's supper since I got a last minute vet appointment to have Taz's eye checked out (looks like an infection). Yay for pre-preparation!
